Virtual Snack & Chat with Clubhouse Mascot Sammy!
Did you go buy a bunch of beans for your COVID-19 self-isolation? Wondering what to do with them all? Sammy is here to help! Step 1 is to build yourself a bean can castle. If you followed Sammy’s weaving craft post you may even have a perfect flag for your castle! If not, I’m sure you can improvise something.
Today Sammy is making a simple bean salad. For this you will need beans and some kind of salad dressing. If you don’t have salad dressing you can make your own! Just mix your favorite oil and vinegar and some salt and pepper.
Once you have your bean salad base and dressing, you can add anything you have on hand to make it more exciting. Some ideas include:
- Frozen veggies like corn or peas
- Freshly chopped veggies like bell peppers and onion
- Pickled or canned veggies like beats
- Dried or fresh herbs like basil, oregano, tarragon or parsley
- Cubed or grated cheese (goat cheese is Sammy’s favorite)
Don’t forget to wash your hands before you start preparing your salad.
Open your beans of choice. Drain them and then pour them into a large bowl. Sammy is using black beans, but you could use all sorts of beans. Chick peas would be good too!
Carefully chop your chosen ingredients into small pieces. Add them to the beans and pour on your dressing. Mix it all together.
And there you go, you have an easy bean salad. Enjoy!
